If retaining historical value is important, and if restoration is the right course of action to take, it should only be carried out by a qualified professional.
Professional restoration and conservation goals are to preserve the original integrity of a piece as much as possible... therefore it is recommended to restore only the damaged or lost areas of any early piece, keeping that original "look." After all it's not age alone that makes an object antique.
It's the history of the surface (finish); remove a good old finish and you damage it's history, it's value, the evidence (that is normal human interaction) which is an integral part of the soul of the piece.
Precautionary actions should always be taken, prudence is taken in cleaning, duplication and stabilizing of an old finish. With over 30 years of experience, blending old world with traditional repair and finishing techniques I have produce many stunningly beautiful pieces.
